INCLUSION THROUGH FOOD

At Moltivolti, the kitchen is much more than a place where meals are prepared — it is a space where social inclusion takes shape through the language of contemporary Mediterranean cuisine.
Our restaurant is the beating heart of a broader social project that values the many cultural heritages present in our territory. Each dish tells a story of cultural and economic connection, born from the encounter of diverse traditions and shared values. We work with seasonal, locally sourced ingredients to create menus that are sustainable, ethical, and rooted in solidarity. These are dishes meant not only to delight the palate but also to nourish awareness — expressions of a Mediterranean identity that is open, international, and constantly evolving.

JOY AT THE TABLE

Our cuisine is a true attitude of hospitality — both on and off the plate. It’s a joyful and genuine way of embracing differences, at the table as in life, celebrating the encounter between cultures with warmth and spontaneity. It’s a delicious embrace between Sicilian tradition and recipes from across the Mediterranean: from Senegal to Tunisia, from Afghanistan to Palestine. A culinary expression that is honest, simple, and heartfelt — as only things made with love can be — yet precise, thoughtful, and full of care.
Our menu, with its contemporary flair, tells the story of an open, mixed, and ever-evolving Mediterranean. A cuisine where internationalism replaces stereotypes, and every dish becomes an invitation to discover, to share, and to understand.

SHARED TABLES

At Moltivolti, we offer shared tables to encourage and facilitate encounters between people. Inspired by the principle of the convivium, shared dining has grown in popularity worldwide in recent years, taking on many forms and meanings.
We believe that the conviviality of food is a deeply human experience — one where individuals transcend the boundaries of familiarity and form new connections.
If you choose to, you can sit side by side with others, eating and conversing elbow to elbow. It’s the perfect solution for spending an evening in good company if you’re dining alone, and a fun, fresh experience for couples or groups of friends. The shared table is also a way to discover more about yourself through dialogue with others and through food — a kind of everyday catharsis.

BARCONI

The Moltivolti Bar

Barconi, created in collaboration with Cappadonia — a benchmark for artisanal gelato in Sicily — and supported by the Freud Foundation and the Haiku Foundation Lugano, has already earned significant recognition: named by Gambero Rosso as one of the seven best gelato shops in Palermo. More than a gelateria, Barconi is a social entrepreneurship project focused on job inclusion, run by migrant men and women in the heart of Ballarò.

Over time, Barconi has become the beating heart of the neighborhood — a place that has brought people together and strengthened our community spirit. This gelateria tells the story of young people striving to redefine their future, despite policies that restrict freedom of movement and strip away rights.
The name BarConi plays on a powerful double meaning. “Barconi” refers both to the large boats that carry migrants across the sea and to the idea of a bar — a gathering space. These boats are, at once, symbols of oppression and freedom: they reflect the desperation of those forced to risk their lives due to closed borders, yet they also carry dreams, resilience, and the pursuit of a better life. They are acts of resistance against exclusionary and racialized migration policies.

The project’s ambition is to build a network of ethical, circular micro-enterprises — promoting inclusion through employment and daily connection with the local community.
What happens when ancient traditions, cultures, and values meet? They enrich one another. That’s the heart of our vision — the same spirit that inspired our one-of-a-kind creation: the Sicilian gelato cannolo featuring the original Moltivolti flavor (peanut, lemon, and puffed rice) with salted caramel. Soon, Barconi will be equipped with its own gelato machine and begin its unique in-house production — a sweet step forward on our journey of social impact.
